Sicilian Eggplant


Welcome to my blog and thanks for following! The writings are created by me, Jennifer Alfia DiMarzo and the photographs presented are also taken by me. I appreciate your dedication as I travel into my seventh month of blog writings.  I hope that you may be able to continue joining me once a week, throughout the remaining five months of my creative year long journey...of course until the next trail sparks! He knew they were best purchased in the summer, especially from their local Farmer's Market.  She was attracted to their beautiful shape and sheen. She envisioned preparing a Rustic Italian dish.  He was mesmorized with how the photographs he took of them were so captivating to his eye, which of course would no doubt transfer onto canvas.  When baked they had such a tender flavor as well as a very sweet taste.  Their thick gorgeous skin reminded her of a ripe portabella and a delicate cut of sirloin.  Not only did they both enjoy knowing that these lovely vegetables are the popular choice in Italy but that they are prevalent at their table any time.  Low in calories, they served as the perfect, healthy main course.  (Of course generously stuffed with risotto, fresh vegetables, ground lamb, cheddar cheese and a touch of pesto, which added that rustic flare she was searching for).  Their day's mission was complete and without surprise, polished off within twenty four hours.  Only scrap cuts of julienned red pepper and ground lamb remained for the pup to enjoy.
